3 Minute Guacamole Recipe
A quick and simple recipe that highlights infamous avocado. So nutritious, always delicious.
I'm slightly embarrassed to say that I didn't like avocado's until a few years ago. I thought the taste was kind of weird and just didn't give them the time of day. But, you know what turned me on to them? GUAC. I tried some homemade guacamole at a neighbor's memorial day party and the rest is history. Avocado is a staple in my household now. On eggs, toast, with chicken, in salad...literally eat it with everything. And when they are getting a little too soft...you know, the kind of softness that turns brown in the matter of 3 seconds...its GUAC TIME!
To boot, Avocados pack in some serious nutrition. They are a prime source of healthy, plant based fats, and great source of potassium, magnesium, vitamin E, vitamin K and the B vitamins.
I like to keep things simple. And when we are working with primely ripened guac- status avocados, its gotta be quick! But no, this recipe seriously takes 3 minutes and tastes amazing. As opposed to many store bought brands, there are no fillers, artificial colors, preservatives or flavors in this homemade recipe. Just fresh, whole ingredients!
Like I said, guacamole is delicious with just about everything. My favorite is carrot sticks and raw broccoli, but I definitely wouldn't pass up some for tortilla chips, a salad or...let's be honest, the list is long!

3 Minute Guacamole
Total Time: 3 minutes
3 medium avocados
1 small lime, juiced
2 tbsp fresh cilantro
1/4 cup red onion, finely chopped
1/2 tsp garlic powder or 1 garlic clove, finely minced
Pink Himalayan sea salt and black pepper to taste
Slice avocados in half, remove the pits and scoop flesh into a medium bowl. Mash with fork, leaving some lumps for texture.
Add lime juice, onion, cilantro and garlic. Mix well.
Add salt and pepper to taste.
Serve* and Enjoy!
*Guacamole is best made fresh, as the avocado will oxidize and turn brown over time. However, you can store in an air tight container with a little bit of additional lime juice for up to 2 days. If it starts to turn brown, scrape off the top layer, and the rest should be green and perfect to enjoy.
